While trying to set up interrupts I noticed that the main article uses the GDT_OFFSET_KERNEL_CODE variable and I was wondering how this would be accessed using the GDT. Would this value be set or would it need to be read from the GDT?

It should be the selector that references the kernel code descriptor in your GDT.
